Breadcrumbs

Oh! AND – I had some chicken breasts thawed and ready in the fridge and didn’t know what to do with them because whenever I try to cook chicken breasts, they come out tough and dry. I don’t know how restaurants cook them so they come out so nice!

Anyway, I bought a great cookbook: “How to cook everything” and I looked up chicken parmesan but moved on because I didn’t have any breadcrumbs handy and didn’t feel like going out.

Well, I kept going back to the recipe because I’d never made a dish like that and I liked the challenge. I noticed that the cookbook had a page reference for breadcrumbs and WOW, I can’t believe how easy it is make them.

Remember that bread I made? I took a slice from the loaf (the end was a little stale at this point), and riped it into smallish pieces and put them in my little Cuisinart food processor, which I’ve had for years and I don’t think I’ve ever used, and chopped up the bread into little crumbs!

The meal came out great and I’m pretty proud of myself for trying something new, AND was able to cook a healthy meal for dinner (all items were organic).
